Eating outside on a bench or checkered blanket is the perfect way to celebrate summer sunshine. This Meatless Monday, head to the park or kick back in your backyard with healthy, portable vegan recipes.
Tips for a green picnic
Before heading out, make sure your impact on the great outdoors will be as minimal as possible.
- Use eco-friendly packaging to transport food. Mason jars are an easy (and trendy) option for storing salads, snacks, and drinks. Stainless steel containers, such as stackable tiffins, also work well.
- Choose stainless steel, BPA-free water bottles.
- Do away with disposable plastic cutlery and plates, and invest in reusable picnicking gear.
With that out of the way, let’s get to the best part—picnic recipes!
Snacks
Start your picnic with Peanutty Blondie Bars, a melt-in-your-mouth combination of peanut butter, chocolate, and coconut. These bars use chickpeas instead of flour, so they’re gluten-free as well as vegan. For an energizing treat, try easy Orange Coconut Fruit Balls studded with dried fruit and walnuts.Â
Salads and sandwiches
No picnic is complete without a salad or sandwich. Muffaletta subs are typically made with deli meats, but our Meatless Muffaletta is packed with juicy tomatoes, sweet roasted peppers, marinated artichokes, and crisp kale.
These Spicy Mediterranean Wraps with zucchini and eggplant are a hummus-smothered dream. Leftovers of the heavenly hummus can also be served alongside crunchy veggies.
And last but not least, Mumbai Salad Jars mix spices such as curry powder and cardamom with sweet mango and blueberries. This Mason jar salad also uses more grains than leaves, so it won’t wilt on the way to your picnic spot.Â
Drinks
When it comes to picnic beverages, citrusy flavours and bright colours are what it’s all about. This Blueberry and Mint Limeade is sweet and refreshing, while our Lemon-Lime Iced Green Tea is a tart treat.
